Broiled Scallops

 



To cook your scallops to perfection, no complicated techniques or specialized equipment are needed. Just follow the easy tips we give you in this article!



*Ingredients :


°scalloped oysters

°salt pepper

for bread

°Neutral cooking oil or cooking butter


* steps :


Remove the small muscle from side of scallop (this small section is not always present).

Rinse scallops in cold water also pat dried with paper towels. Personally, I just season them at the end, but you can also season them with salt and pepper.


In a frying pan, preferably cast iron, heat neutral cooking oil or cooking butter (you can be creamy with the amount).


When the pan is very hot and starts to smoke a little, put the scallops in it. Avoid overloading the pan and leave space between the scallops so that they don't touch each other.


You should not lower the temperature at this point. Grill the scallops for a few minutes.


To know when to flip it over, watch the progression of the color change on the side of the scallop. As they cook, the scallops become more opaque white. This changing in opacity occurs to base of scallop to top. When you're for halfway through scallops, flip them over.


Immediately close the ring and remove the pan from the heat. Wait about a minute to continue cooking. The important thing is to have at least one side of the grilled well and not to overcook the scallops.

Remove excess butter or oil from the scallops by placing them on paper towels.

Season with a little flur de sel and enjoy right away!
